Cookie Dough Popsicles (gluten-free)

I’ve been on a popsicle kick this summer.  Who can blame me? It’s so easy!!!!  I saw this recipe of Chocolate Covered Katie.  If you haven’t been over to her blog – you are missing out.  When she posted this recipe, I looked at the ingredients and thought – there is no way those popsicles taste like cookie dough.  Au contraire.  They do.  They really do.  And depending on the quantity of fake sugar used, these guys are in the neighborhood of 40 calories each.  Not to shabby.  The only complication in this recipe is getting the chocolate chips to be throughout the popsicle (they like to sink).  So, aside from freezing these in two stages (which only serves as a semi-solution), if you come up with a better idea, please let me know!

Makes 4 small popsicles.

Ingredients:

  • 2/3 cup fat free milk
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp brown sugar
  • 1 nunaturals stevia packet (or 1 1/2 tbsp more brown sugar)
  • 1 heaping tbsp mini chocolate chips

Directions:

1.  Combine all ingredients and stir well.

2.  Pour into paper cups or popsicles molds, and freeze. (If you want the chocolate chips to not all sink to the bottom, pour only 1/2 the mixture into each pop mold and freeze, then add the rest and freeze again.)

3.  That’s it – enjoy!

Ciao Bella Adonia Frozen Greek Yogurt, Watermelon Ice Pops, And Whole Pieces

I’ve been asked to guest blog over at  Whole Pieces.  Blogger and certified health and wellness coach, Julie Casper, focuses on the overall health and well being of her clients.  Through her blog, she addresses nutritional news, healthy choices, and healthy perspectives.  You can also find Whole Pieces on Twitter and Facebook too!

Julie asked that I share an all natural recipe and include some of my own food/well being perspective.  So, I gave her my Watermelon Ice Pop recipe and some mental food for thought.

As a teaser, I am now including a product review for Adonia Frozen Greek Yogurt (the white end of the pops).  For the ice pops (pictured above), ideally you would want to use a green-colored frozen treat to get the “watermelon effect”.  Of course, getting green generally means green food coloring – i.e. artificial flavoring.  So, instead, I went for a green taste by employing the tastiness of Ciao Bella’s Adonia Key Lime Greek Frozen Yogurt.  It isn’t green in color, but the taste and the nutritional aspects make up for it.  Unlike Ben & Jerry’s f ake  greek yogurt (see here), this stuff is real, right down to the live and active cultures and protein content.  No only that, but unlike ice cream, it’s only 130 calories per serving!

Finally, I should mention that this stuff is super tasty.  I’ve had the key lime flavor and the espresso flavor (which I like better).  You cannot go wrong with this product and it is such a great alternative to ice cream.  Click here to find out where you can buy this tasty treat.
