Peanut Butter Chocolate Chip Cookies

Sometimes you just want one cookie and then,  you make a whole batch.  C’est la vie!  I had this lingering half full bag of mini chocolate chips and peanut butter that was about to expire – and thus, these cookies were meant to happen.  This recipe also gave me a chance to really see what my new Breville Smart Oven is made of.  I’m talkin’ about my new “toaster-oven”.  I love the Breville! I am using it more and more and, it really can be a great substitute for the oven in so many scenarios.  Also, I can avoid heating up my house by using my conventional oven.  And, it heats up fast!  So, these are my spare ingredient, toaster-oven cooked, and super delicious peanut butter chocolate chip cookies!  Enjoy them!

 

Ingredients:

1/2 cup of butter, softened

1/2 cup of chunky or smooth peanut butter

1/2 cup granulated sugar

1/2 cup of brown sugar, firmly packed

1 egg

1 1/4 cups all purpose flour

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup of chocolate chips or a half cup of mini chocolate chips

Directions:
1.  Preheat oven to 375°
2.  Cream the butter, peanut butter and sugars until light.
3.  Add the egg and mix until fluffy.
4.  Blend the flour, baking powder, soda and salt together well.
5.  Add these dry ingredients to the butter mixture.
6.  Add the chocolate chips.
7.  Drop cookie dough by teaspoonfuls onto lightly greased baking sheets.
8.  Bake for 11-13.
Grab some milk and enjoy!
